Java Berry Pancakes


BATTER
1/2c whole wheat flour
1/4c egg whites
1/2 banana mixed in
1/2 banana for topping
1/4c 1% cottage cheese
1/4c brewed coffee
1/4c 1% milk
small drizzle of honey
cinnamon
2 strawberries for topping

TOPPING
1/8c Dannon Light and Fit Vanilla Yogurt
cinnamon
small drizzle honey

410kcal / 2.15g fat / 42.75g carbs / 31g prot.

Rating: Absolutely Amazing =)

This made 4 medium/large pancakes. Definitely filled me up. If you doubled the recipe, it would probably feed 3 people. You can also substitute skim or soy milk instead. The honey for the batter was like a thin drizzled circle around twice. I was really surprised and happy with how it turned out. I'm keeping this one. ^_^

Sweet Apple Couscous



2 small apples
1 small onion
1 large red pepper
2 medium carrots
1 tbs olive oil
1/2 cup 1% cottage cheese
1 cup couscous (dry measurement - cook it)
1/4 tsp ginger
1/4 tsp cinnamon
1/8 tsp ground cloves
(serve over spinach)

Makes 4-5 servings
261 kcal / 3.75g fat / 41.375g carbs

Rating: It was alright

This was pretty good. The apples really kick the flavor off. I'm thinking it still needs something though - I'll mess around with it again and update this one in the future. Perfect for a light comfort meal, but still fills you up.

Introduction

So I am on a blogging role -- I've decided (in addition to my facebook section) to log all of my attempts at recipe making and good foods on here. They are all from my head and from scratch. Then I work up the courage to eat them and tell you if it was worth it. Each entry will contain a recipe (unless otherwise specified), the ingredients, food stats, and my personal rating. Then it is up to you, the reader, to decide if you would like to try it out.
